Suggestions for a Low-Activity Trip in December

My partner and I have had a hard year with health complications. We want to go away for a week to wash away the year and give ourselves the chance to make some new happy memories. Thankfully, my partner is in good health now. I am experiencing an autoimmune flare that inhibits me from being able to walk for long periods. Otherwise healthy.

Normally, we are very active when we travel and are being forced to reimagine how we vacation due to my current limitations. Has anyone dealt with something similar? We are looking for creative suggestions for ways we can use this opportunity to do something we might not normally choose.

We can walk around a bit each day, no hikes or exploring large cities all day for me but optional hikes in the area for him would be welcome. I'm thinking something more rural, maybe a unique stay in the country.

Mexico has come up a few times, but welcome to all suggestions as specific as you like. We are not really resport people, but. maybe we should be resort people! My mind can be changed.

We are from Ontario and are looking to go in the first week of December. We're open to international and within Canada.
